Asian Cherry Peanut Salad

I purchased some freshly roasted Hatch chili peppers and beautiful dark red cherries and came up with this salad.  I love the color, textures and fresh tastes in this salad. 

Ingredients

Salad Ingredients

½ head Chinese cabbage, chopped

¼ head red cabbage, chopped

2/3 cups carrots, julienned

¼ small red onion, thinly sliced

1 cup of dark red cherries, pitted & halved

1 roasted Hatch chili, skin removed, diced (can substitute a poblano)

3 T. toasted sesame seeds

¼ cup chopped roasted peanuts

 

Dressing Ingredients

¼ cup fresh natural peanut butter

1 T. low sodium soy sauce

2 T. rice vinegar

2 T. brown sugar

1 t. fresh grated ginger, skin removed

¼ t. chili pepper paste

1/8 t. garlic salt

Instructions

Place all of the dressing ingredients in a small saucepan over low heat.  Whisk the peanut mixture until smooth and melted, then set aside.

 

Place Chinese cabbage, red cabbage, carrots, red onion, cherries and Hatch chili pepper in a large salad bowl and mix together.  Drizzle the salad dressing over the top then top with toasted sesame seeds and chopped roasted peanuts.  Serve as an entrée or as a side dish.
