Banana, Chocolate, Pecan Oatmeal Muffins

This might be one of the girls all time favorites.  They thought this would be the perfect healthy breakfast to make for when friends sleep over or to take when they go camping.  We agreed this would be much healthier than pop tarts!

Ingredients

1 ½ cups oatmeal
½ cup oat bran
3 bananas, mashed
1 cup almond milk
1 t. vanilla
1/3 cup Enjoy Life brand chocolate chips
¼ cup flaxseed
1 T. maple syrup
½ t. baking soda
¼ t. cinnamon
¼ cup chopped pecans
12 pecan halves

Instructions

Preheat the oven to 375 degrees.

Combine all of the ingredients except the pecan halves in a mixing bowl.  Stir until well blended.

Spoon batter into muffin tins.  Place 1 pecan half on top of each muffin.

Bake for 30 minutes.  Serve by themselves with fruit or pour milk on top and enjoy.
