Black lentils, beans and artichoke hearts with brown rice

This was a super quick dinner I threw together with items we had in the pantry and the freezer.  Super good and colorful!

Ingredients

1 can organic black lentils, rinsed
1 pkg. frozen beans & carrots
1 can artichoke hearts in water
1 ½ cup brown rice, cooked
3 kale leaves, finely chopped
2 roasted red peppers, diced
1 yellow onion, sliced in thin strips
1 can vegetable broth
1 t. onion powder
1 t. salt
Freshly cracked multi pepper blend
1 large lemon, juiced
Fresh Basil, thinly sliced

Instructions

Prepare the brown rice in a rice cooker with 2 ½ cups of water.  If your cooker has a steamer add the frozen vegetables on top of the rice.

In a large skillet add the onion with about ½ cups of water and cook thoroughly until the onion is softened.

Add the kale, artichoke hearts, roasted red pepper, black lentils vegetable broth, onion powder, salt and cook until the kale is wilted and the vegetables are heated.

Stir in the steamed frozen vegetables and mix well.  Add the lemon juice and heat another couple minutes.

On a serving plate, spoon on some rice and cover with vegetables.  Garnish with basil and extra cracked pepper.
