Broiled Cauliflower & Broccoli

Broiled cauliflower might not sound very appetizing but I assure you this recipe is definitely worth making.  This is now my favorite way to eat cauliflower & broccoli, super healthy and super delicious!

Ingredients

1 head cauliflower
2 bunches broccoli
3 cloves garlic, minced
Dried oregano
Dried cumin
Red pepper flakes (optional)
Trader Joe’s Everyday Seasoning
Smoked paprika
½ lemon

Instructions

Line a baking sheet with non stick foil.

Clean the cauliflower while keeping the whole head in tact.  Remove outer leaves and rinse well.  Boil approximately 12 – 14 cups of water depending on the size of your cauliflower.  Place cauliflower in a large bowl and pour the boiling water over the top so the whole head is emerged in the water.  Leave the cauliflower in the boiling water for approximately 10 – 15 minutes.  Drain off the water and place the head of cauliflower on a cutting board.  Repeat with the same steps with the broccoli; only immerse the broccoli for only about 4 – 5 minutes in the boiling water.

Using the lemon, cut in wedges, coat the entire head of cauliflower and broccoli. 

Next place the minced garlic along with a nice sprinkle of the oregano, cumin, red pepper flakes, Trader Joe’s Everyday Seasoning and smoked paprika on top of the cauliflower and broccoli.  Using your hands spread the spices to coat the entire head.  Break apart each individual head of cauliflower and cut the broccoli then place on baking sheet.

Place in the broiler on the top shelf for 10 minutes.  Remove from oven and flip each piece over.  Place back in broiler for another 5 to 10 minutes until the pieces start to brown.

Remove from oven.  Serve as a side with a veggie burger, or an appetizer with some white bean dip or hummus.
