Brown Rice Medley Risotto

My husband and I picked up this fantastic mix called Brown Rice Medley at Trader Joe’s.  It is a mixture of long grain brown rice, black barley and daikon radish seeds.  The texture is fantastic and smells great as well.  I made this dish for Easter dinner and served it with some wilted greens.

Ingredients

16 oz. Trader Joe’s Brown Rice Medley
5 cups water
1 large yellow onion, diced
1 bunch asparagus, trimmed & cut in 1 ½” pieces
1 large yellow pepper, chopped
½ bag frozen peas
1 cup white wine
3 large cloves garlic, minced
Zest & juice from 1 large lemon
Trader Joe’s Everyday Seasoning to taste

Instructions

Cook the Trader Joe’s Brown Rice Medley and 5 cups of water in a rice cooker. 

While the brown rice medley is cooking, place the onion in a large skillet over medium high heat.  Stir after 4 minutes or so once the onion begins to caramelize.  Continue stirring until all of the onion is nice and brown.  If it starts to stick, add a couple tablespoons of water to the pan.

Next add the asparagus, yellow pepper, frozen peas and white wine in with the onions.  Sauté the veggies for a couple of minutes and then add the garlic and lemon juice.  Stir well and continue cooking until done.

Add the brown rice medley in with the veggies and season with the everyday seasoning.  Sprinkle lemon zest on top and serve.
