French bean Pasta

This quick and simple pasta dish is very healthy and colorful.  The leftovers are pretty wonderful too the next day.  If you can’t find the chiocciole pasta, any whole wheat pasta will work fine.

Ingredients

1 red onion, thinly sliced
8 oz French beans, trimmed
2 cups Amora tomatoes, halved
1 bunch lacinato kale, thinly sliced
1 large lemon, zest and juice
3 cloves garlic, minced
1 t. dried basil
Pinch red pepper flakes
1 lb. chiocciole 100% whole wheat pasta
Pasta water
Salt to taste

Instructions

Boil water for pasta.

Using a large skillet add the onions and sauté over medium high heat for 3 to 4 minutes.

While the onions are sautéing, place the French beans in the pasta water and cook for approximately 4 to 5 minutes.  Using a slotted spoon, remove the beans from the water and then add in with the onions. 

Add the pasta to the boiling water and cook for 11 minutes.

Add the tomatoes, kale and garlic in with the onions and beans.  Ladle 2 spoonfuls of pasta water in with the veggies.  Add the lemon zest, lemon juice, basil and salt and pepper.  Add 2 to 4 more ladles of the pasta water into the sauce.

Drain the pasta and top with veggies.
