Multi Grain Carrot Risotto

This was a quick and delicious dish I threw together from what I had in the pantry and refrigerator.  I was worried there might have been too many carrots but I really loved the flavor of the carrots as one of the main ingredients.  This only took about 15 to 20 minutes to make this dish!

Ingredients

1 16 oz. pkg. Trader Joe’s Harvest Grains Blend
1 box unsalted vegetable stock (about 4 cups)
½ cup white wine
10 oz. shredded carrots
1 medium Vidalia onion, diced
1 red pepper, chopped
1 small bunch broccoli cut in florets
1 t. toasted onion powder
¾ t. dried oregano
2 cloves garlic, minced
Salt & Pepper to taste

Instructions

Place the vegetable stock in a medium size saucepan and bring to a boil. Add the Harvest Grains Blend, toasted onion powder, oregano and salt & pepper then bring back to boil.  Reduce heat to simmer and cover for 10 minutes.  Stir frequently to reduce sticking.

While the vegetable stock is heating up, sauté the onion in a large skillet until caramelized.  Pour 2 ladle size servings of the heated vegetable stock in with the onion.  Add in the carrots, peppers, broccoli, white wine and garlic and continue to sauté until vegetables soften.

Place about a cup and a half of grains in a pasta bowl, then top with the vegetables and serve.
