Peanut Butter Granola

The peanut butter I use is just plain peanuts that you can grind yourself at the health section of the grocery store. Also if you love peanut butter and chocolate, omit the cranberries and and 1 1/2 cups of Enjoy Life dark chocolate chips. 

 I made this for the holiday weekend and everyone thought this was really good granola.  Some of us even ate two bowls!

Ingredients

42 oz. old fashion oats

16 oz. quinoa

½ cup ground flaxseed

16 oz. peanuts

1 cup brown sugar

2/3 cups honey

1 ½ cups natural peanut butter

2 t. vanilla

½ cup water

1 t. salt

1 ½ cups dried cranberries

 

Instructions

Preheat oven to 325 degrees.

 

Line 2 baking sheets with parchment paper. 

 

Place all of the dry ingredients; oats, quinoa, flaxseed and peanuts in a large mixing bowl. 

 

Add the brown sugar, honey and water in an 8 cup Pyrex glass measuring cup.  Stir well then microwave on high for 5 minutes until dissolved.  Immediately add salt, vanilla and peanut butter and stir until creamy.  Slowly pour mixture over dry ingredients and fold in until everything is well coated.

 

Divide granola on the two baking sheets then spread out evenly.   Bake for 45 minutes to 1 hour until granola starts to brown stirring every 15 minutes.

 

Remove from oven and add cranberries.  Cool completely on baking sheets then store in air tight container.
