Pineapple Bean Burger

We had a grill out over at my parent’s home for Mother’s Day.  Everyone else grilled out hamburgers and hot dogs.  We had these spectacular burgers.  I grilled our pineapple on the top shelf of the grill and it worked out perfect.  These are actually baked and were very tasty.

Ingredients

1 can black beans, drained
8 oz. mushrooms, chopped
1 ½ cup onion, diced
2 T. jalapeños
¼ t. allspice
¼ t. nutmeg
¼ t. fresh ginger, shredded
¼ t. chili powder
½ t. salt
3 large cloves garlic, minced
2 T. tomato paste
1 cup cooked brown rice
1 ½ cups panko bread crumbs
6 pineapple slices, grilled

Instructions

In a large skillet add the onions and mushrooms over medium low heat.  While they start to cook, chop the jalapeños up finely.  Add one clove of garlic to the onions and mushrooms.  Add in the jalapeños and mix well. 

Next add the allspice, nutmeg, ginger, and chili powder, salt and remaining garlic with the mushrooms, onions and jalapeños.  Stir well then place in a medium size mixing bowl.

Add the following into the same bowl; tomato paste, brown rice, and panko bread crumbs.  Using your hands mix and mash all of the ingredients together.  Form the ingredients into a large flat ball and using a knife, divide into six equal sizes.  I usually draw a line horizontally across the middle and then draw two more vertical lines so this way I have pretty even patties.  Form into patties and place on a cookie sheet lined with parchment paper.

Bake at 375 degrees for 8 minutes, flip over and bake another 8

minutes.

Place on whole wheat bun with a slice of grilled pineapple and lettuce.
