Really Good Banana Bread

This banana bread is very simple to make and comes out just as moist as any other banana bread baked with butter.  I have also replaced a half cup of oatmeal for a half cup of oat flour since I didn’t have enough flour.  I love the professional bake pans from Sur la Table.   These pans require no spray, nothing ever sticks to these pans and clean up is a breeze.

Ingredients

2 large very ripe bananas

2 T.  ground flaxseed

6 T. water

½ cup sugar

1 t. pure vanilla

1/3 cup unsweetened vanilla almond milk

2 ½ cups oat flour

2 t. baking powder

1 t. baking soda

½ t. salt

½ cup roughly chopped walnuts

1 T. oatmeal

Instructions

Preheat oven to 350 degrees.

 

Whisk the ground flaxseed with the water in a small bowl and set aside.

 

Mash the bananas with a potato masher and add to a large mixing bowl.  Whisk the ground flaxseed with the water in a small bowl and add with the bananas.  Add the sugar unsweetened almond milk and vanilla and mix with beaters on high until well blended.

 

In a separate bowl place the dry ingredients; oat flour, baking powder, baking soda and salt.  Turn mixer on low speed and slowly add the dry ingredients.  Once the mixture is well blended turn mixer up on medium high speed for about 30 seconds.  Fold in chopped walnuts.

 

Pour in a professional nonstick bread pan.  Sprinkle lightly with oatmeal and bake in oven for 50 minutes or until a toothpick inserted into the center comes out clean.
