Simply Delicious Marinara

I use to purchase marinara out of the jar quite a bit.  Now I make my own all the time.  This is pretty basic, I might change it up a bit with herbs or sometimes I will use puree tomatoes instead of crushed or whole tomatoes and just squish them with my hands.  Every time the results or far superior than any jar sauce you can buy.  Very quick and super delicious!  In this particular dish I used whole wheat spaghetti and arugula.

Ingredients

1 28oz. can crushed tomatoes
1 28oz. can seasoned diced tomatoes
1 large yellow onion, diced
8 oz. sliced mushrooms
2 t. salt
1 ½ t. dried oregano
1 t. basil
4 large cloves garlic, minced
1 T. honey

Instructions

Place the onions and mushrooms in a large skillet and cook dry over medium high heat until they start to caramelize.  Add 1/3 cup of water and 2 cloves of garlic in with the onions and mushrooms.  Continue to cook until most all of the water is evaporated.

Add the crushed tomatoes, the diced tomatoes, the salt, oregano, basil, honey and remaining cloves of garlic.  Stir until well blended.  Bring to a low boil and reduce heat to low setting.  Continue cooking until the pasta is ready.
