Strawberry Avocado Dressing

Strawberries and avocados make the perfect combination for a salad dressing.  The avocado will make a nice creamy dressing thicker then vinaigrette.  You can substitute balsamic vinegar too if you like.  This works well served on either spinach or kale. 

Ingredients

16 oz. strawberries, cleaned & stemmed

½ avocado

5-6 Medjool dates, pitted then covered with cold water

3 T. apple cider vinegar

zest from 1 lemon

¼ t. vanilla bean paste

Instructions

Slice the dates in half and remove pit.  Place in a small bowl and cover with enough cold water until the dates are submerged.  

 

Place strawberries, avocado, apple cider and vanilla bean paste in a blender.  Pulse until smooth.  Next add the dates and pulse until smooth.  Finally had lemon zest then pulse for just a second or two until blended.  Taste dressing and adjust seasonings if needed.

 

Place in a small pitcher and serve over salad greens.
