Asian Noodles

This is a wonderful easy dish to make that is full of flavor.  You can add some sugar snaps instead of the peas if you like. 


½ cup natural peanut butter
¾ cup water
3 T. soy sauce
3 T. rice wine vinegar
¼ t. crushed red pepper flakes
2 – 3 cloves crushed garlic
¼ t. salt
1 T. brown sugar
1 t. fresh ginger
1 box whole grain spaghetti
2 red peppers sliced very thin
2 cucumbers seeded and sliced very thin
1 cup frozen peas
1 bunch scallions chopped
2/3 cup chopped peanuts


Cook spaghetti according to package.  Reserve ½ cup of pasta water.

In a food processor or blender mix together water, soy sauce, rice wine vinegar, brown sugar, salt, ginger and garlic.  Place spaghetti in pasta serving bowl.  Add peas, red pepper, cucumber and scallions.  Pour dressing and crushed red pepper flakes on top of spaghetti and vegetables.  Garnish with peanuts and serve.  Delicious!
