Asparagus Salad

This is my favorite way to eat asparagus and its quick easy and fantastic!  My friend Bonnie gave us the most beautiful asparagus and we ate the entire bunch in one setting!


1 lb. large asparagus, trimmed
½ carton grape tomatoes, halved
1 clove garlic, minced
4 large leaves, fresh basil, sliced
Salt & pepper to taste
Balsamic vinegar


Turn on the broiler on the high setting.

Place the asparagus on a baking sheet.  Drizzle with a bit of good quality balsamic vinegar.  Put in the oven and broil for 5-7 minutes until asparagus turns bright green and are done.  Remove from broiler.

While asparagus are cooking, mix grape tomatoes, garlic, fresh basil, salt and pepper together. 

Place the asparagus in a shallow serving dish.  Pour tomato mixture on top of asparagus and then drizzle more balsamic vinegar on top.  Serve as a side.
