Baby Bok Choy

This is a quick and simple vegetable that makes the perfect side dish.


4 – 5 baby bok choy
1 can vegetable broth
1 T. apple cider vinegar
½ t. onion powder
¼ t. salt
Fresh cracked pepper blend


Remove outer leaves and slice baby bok choy lengthwise.  Be sure and clean really well down near the base.  Place in a large skillet.

Pour vegetable broth, apple cider vinegar, onion powder, salt and fresh cracked pepper blend on top of the baby bok choy.  Cook on medium high, covered for approximately 4 to 5 minutes.  Vegetables should be softened.  Remove from heat and serve.
