Beet, Carrot & Apple Slaw

This salad has a lot of crunch from using raw ingredients like the beets, carrots and celery.  The dried fruit and nuts enhance the vegetables quite nicely with light vinaigrette.


1 bunch of beets, scrubbed, pealed & julienned
5 - 6 medium carrots, julienned
4 stalks celery, sliced
2 apples, cored & julienned
2 lemons juiced & zest
¾ cup dried cherries
¾ cup pistachios
¼ cup fresh mint leaves
¼ cup fresh parsley, chopped
3 T. honey
½ cup champagne vinegar
2 T. water
2 cloves garlic, minced
Salt & pepper to taste


Soak julienned apple slices in juice of one lemon.  Make sure they are well coated and set aside.

Combine champagne vinegar, water, juice from one lemon, lemon zest and honey in a small bowl.  Whisk vinaigrette until well blended and set aside.

In a large salad bowl combine beets, carrots, celery, apples, mint leaves, parsley, dried cherries and pistachios together.  Pour the vinaigrette over the salad and mix well.  Season with salt & pepper and serve.
