Bonnie’s Texas Caviar Recipe

My friend Bonnie introduced me to this terrific dip.  We serve it with fat free Tostitos.


1 carton grape tomatoes, halved
½ pkg.  frozen sweet corn
½ red onion diced
1 can black eyed peas, drained
1 can hominy, drained
1 can black beans, drained
1 red pepper, diced
1 small handful fresh parsley, chopped
1 small bottle Fat-Free Italian Dressing


Combine all ingredients and refrigerate for at least 1 hour.  Serve with baked Tostitos.
