Bonnie's Squash Soup

My friend Bonnie created this delicious soup with squash from her garden.  It was super good!


1 acorn or butternut squash, baked and pureed
1 cup chopped carrots
1 cup diced celery
1 medium onion, diced
1 red pepper diced
2 cubes vegetable bouillon + 2/3 cup water
1 t. salt
1 t. onion powder
1 t. paprika
½ t. dried dill
1 t. garlic powder
¼ t. cayenne pepper
1 T. brown sugar
1 box Vegetable Stock
1 28 oz. can diced tomatoes


In large stock pot, sauté carrots, celery, red pepper and onion with vegetable bouillon cubes and water until softened.  Add squash puree to vegetables and mix well.

Add remaining seasonings, vegetable stock and tomatoes and cook over med low heat for 1 hour.  Taste and adjust seasonings.  If too thick add 1 cup of water, and readjust seasonings.

Serve with crackers or crusty dinner rolls.
