Breakfast Quesadillas

This is a great recipe the kids can make by themselves.  They had so much fun assembling the quesadilla and then eating them afterwards.


8 whole wheat tortillas
2 bananas, sliced
2 apples, thinly sliced
½ cup peanut butter
Dried cherries or raisins are optional


Preheat oven to 400 degrees.

Spread peanut butter on all of the tortillas.  Arrange bananas, apple slices and dried fruit on 4 of the tortillas.  Drizzle honey on top of the tortillas.  Place another tortilla with just peanut butter on top.  Seal edges and bake on cookie sheet lined with parchment paper.  Bake for 5 minutes then turn quesadilla over and bake another 5 minutes.  Cut in wedges and serve.
