Chocolate Cupcakes

I made these cupcakes for my sister’s birthday.  She said they were awesome and I must agree.  She said they were even better than the cupcakes made with eggs and oil.  They were the best chocolate cupcakes I have ever eaten,  yummy!

*Note: I have made edits to the original recipe posted.  This version tastes identical and with less sugars.

Ingredients

Chocolate Cupcakes
Cupcake ingredients

1 ¼ cup oat flour
1 ¼ cup spelt flour
1 cup date sugar
1/2 cup coconut sugar
2/3 cup cocoa
2 t. baking soda
½ t. baking powder
1/2 cup Enjoy Life Chocolate Chips
2 ¼ cup Almond milk
4 oz. natural applesauce
1 t. vanilla
½ t. salt

Chocolate frosting
1 T. unsweetened vanilla almond milk
1/2 cup Enjoy Life chocolate chips
2 T. cocoa
3 T. coffee
1 T. maple syrup
1 t. vanilla
1 1/4 cup powder sugar

Instructions

Preheat oven 375 degrees.

Combine all of the dry ingredients together and mix

well.

Combine all of the wet ingredients together.

Combine wet and dry ingredients

together.

Using foil/paper cup liners, line the muffin tins with liners.  Pour chocolate batter into the liner cups using a ladle.

Bake for 25 minutes and remove from

oven.

While the cupcakes are cooling, prepare the frosting.  In a small sauce pan add all of the ingredients except the powder sugar.  Heat the frosting on low heat until the chocolate starts to melt.  Remove from heat and whisk in the powder sugar.  You can add more powder sugar if the frosting is too runny. 

Frost cupcakes and enjoy.
