Chunky Monkey Free Ice Cream

This recipe works perfect with very ripe bananas that are frozen.  I peel ripe bananas and cut them in chunks placed in a Ziploc bag and keep them in the freezer so they are always ready.  It's great to know you can have ice cream without dairy.


4 to 5 frozen bananas ( freeze in plastic bag with skins off in chunks)

½ cup vanilla flavored sugar free Almond Milk

¼ c. Parkers all natural crunchy peanut butter

1 T. cocoa

¼ cup Enjoy Life brand mini semi-sweet chocolate chips

a pinch of sea salt


Combine bananas, almond milk, cocoa and sea salt in food processor.  Blend until smooth.  Pour ingredients in a separate bowl and stir in peanut butter and chocolate chips.  Note: the peanut butter and chocolate chips should be just kind of folded in so when you bite into the ice cream you have chunks of peanut butter and chocolate.  Serve immediately.
