Fruity Pasta

I saw this fanciful fruit blend pasta at the farmer’s market and thought the kids would like this.  The pasta is in fun colors, like purple, yellow and orange and actually tastes fruity.  The girls had fun cutting the fruit and eating their results.  You can purchase this pasta at www.pappardellespasta.com .  I would serve this with maybe some hummus and carrots.

Ingredients

½ lb. Pappardelle’s Fanciful Fruit Blend
1 cup green grapes
1 cup red grapes
1 cup sliced strawberries
1 cup sliced pineapple
1 cup raspberries
1 15 oz. can mandarin oranges, drained
2 stalks of celery
½ cup toasted almond slices

Dressing Ingredients
1/3 cup lemon juice
4. T. honey
½ cup water
¼ cup raspberries
¼ t. salt

Instructions

Cook pasta in about 6 quarts of boiling water for 8 – 10 minutes.  Drain and rinse with cold water.  Pour in large pasta bowl.

While pasta is cooking prepare fruit.  Have the children help you cut the fruit in small bite size pieces.  Once all the fruit is cut add in large pasta bowl.

Prepare dressing by mixing all ingredients in a 2 cup measuring cup and whisk well.  If you don’t want to make your own dressing, fell free to use any fat free raspberry or fruit vinaigrette. 

Mix pasta, fruit and dressing together until all ingredients are well coated with the dressing.  In small bowls, serve pasta and garnish with toasted almond slices.
