Hearty Friendship Soup, Vegan Style

My friend Bonnie made this for me when I was under the weather.  This soup was super delicious.  I love the color and the wonderful flavors this soup has.

Ingredients

2-3 sweet potatoes
1 large butternut squash, peeled, chopped
1-2 cups water
1 medium sweet red pepper, chopped
1 orange pepper, chopped
4-6 green onions, chopped
4-6 carrots, diced
1-small red hot pepper or you can use dried cayenne pepper to taste.
2 vegan chicken or vegetable bouillon cubes,
1 cup water
1/2 t salt (omit salt if using bouillon)
1/2 t. onion salt
1/4 t. ground pepper
2 T Curry powder
1 t. dried garlic pieces
2 T. brown sugar
1/4 t dried or fresh dill
1cup water
1/4 cup white wine
1 quart vegetable juice
1 cup fresh, peeled grape tomatoes* or one can stewed tomatoes
1 can canellini beans

Instructions

Cook the sweet potatoes in microwave; cook 1 large butternut squash with
1-2 cups water until tender; add the water from this to the vegetable
ingredients.

Blend the potatoes and squash, set aside.

Using a large stock pot, add the red pepper, orange pepper, green onions, carrots, red hot pepper bouillon cubes, water and spices.

Simmer the above vegetables in the water on medium heat so that they
thicken; stir often and watch so that it does not burn. Add 1cup water and
1/4 cup white wine.

Add the blended squash and potatoes and the reserved water; turn the heat
to low and continue to simmer.  Add 1 qt. vegetable juice.  You can add
more if you like. Add 1 C. fresh, peeled grape tomatoes* or a can of
stewed tomatoes.
Simmer for 30-45 minutes on low heat and stir often. Taste and add your
favorite spices as you choose.

Add one can of Canellini beans, stir in gently.

**I save my grape tomatoes in containers at the end of summer in the
freezer. These can be placed in a bowl of cold water to thaw slightly and
remove the skins (squeeze the tomatoes and most of the skin is removed
easily). No need to chop as they cook quickly.

Serve with whole grain breads; fresh cranberry preserves and fresh
fruits!!! Wine or wheat beer will compliment this soup. This soup is
hearty, delicious and warms the hearts of the folks you invite to share
this meal.  Enjoy!
