This is a delicious, colorful salad that takes very little time to put together.  I love the corn flavor from the hominy in the salad to give this a very unique taste.  Place the hominy in the refrigerator the night before using so it is cold from the start.



2 – 15 oz. cans hominy, drained & rinsed

1 - 4 oz. jar of pimento, drained

1 yellow pepper, diced

1 small red onion, diced

2/3 cup kalamata olives, pitted

2 tomatoes, diced

1 ½ cups shredded carrots,

1 small jalapeno, seeded & diced

1 handful of cilantro, chopped

½ lemon, juiced

1 ½ t. dried oregano

1 ½ t. Penzey’s Sandwich Sprinkle

Salt & Pepper to taste


Place hominy, pimento, yellow pepper, red onion, kalamata olives, tomatoes, shredded carrots and jalapeno in a medium sized mixing bowl.  Stir well until all ingredients are mixed well.  Pour lemon juice, oregano, Sandwich Sprinkle and pepper on top of salad mix.  Stir well and season with salt if needed.  Refrigerate until ready to serve.
