Kale Clementine Pomegranate Salad

This salad has a wonderful explosion of flavor and textures.  I love using red kale for this salad but you can substitute any other kale.  A friend gave us a bottle of pomegranate syrup from her trip to Turkey while visiting her daughter.  If you can’t find pomegranate syrup you can make simple syrup with cranberry juice and sugar that would also be very good and pretty.

Ingredients

1 bunch red kale, cleaned, stripped and cut in bite size pieces
3 Clementines, peeled and cut in rounds
2/3 cup pomegranate seeds
½ cup pistachios
¼ cup red onion, thinly sliced

Vinaigrette Ingredients

4 T. red wine vinegar
1 t. Dijon mustard
3 T. pomegranate syrup
1 clove fresh garlic
Fresh cracked pepper

Instructions

Prepare the dressing first; place ingredients in a 1 cup glass measuring cup and whisk together.  If you like a sweeter dressing, add more pomegranate syrup.  Set aside the dressing while preparing the salad.

Place rinsed torn kale pieces into a large nonstick skillet over medium high heat.  Continue to toss and stir the kale until slightly wilted and remove from heat.  Place kale in a large salad bowl.

Next place the Clementines, pistachios, red onions and pomegranate seeds on top of the kale.  Pour the vinaigrette on top of the salad and toss.  Place in serving bowls and sprinkle with fresh cracked pepper.
