Kale Fruit Salad

Fruit salad and kale makes the perfect salad combination!  No need for any sugar, there is plenty of sweetness from the fruit and the delicious vanilla infused balsamic vinegar.  If you can’t find this type of vinegar, mix about 1 cup of balsamic vinegar with 1 t. of pure vanilla and heat in a small saucepan until the mixture thickens and develops a wonderful aroma.

Ingredients

1 bunch of kale, cleaned and trimmed in small pieces
1/4 cup dried cherries, plumped
2 kiwis, peeled and cut in halves
1 cup strawberries, sliced
1 ambrosia apple cut in chunks
1 orange, cut in chunks
1 cup black berries
Vanilla infused balsamic vinegar

Instructions

Clean the kale then place in a skillet with approximately 1 ½ cups of water and cook on medium high heat.  Stir until the kale starts to wilt and shrink inside.  It should look bright green in color.  Drain the kale and set aside in a salad bowl with plumped cherries.

Prepare the fruit salad by placing the kiwis, strawberries, apples, oranges and black berries in a bowl and mix well.

Drizzle some of the infused balsamic vinegar on top of the kale and mix well.  You really don’t need that much because the flavor carries through very nicely. 

Assemble the salad by placing the kale on the bottom of a salad plate or bowl, then top with the fruit and serve.
