Kale Sandwich

I found this delicious whole wheat carrot bread and beautiful kale at the food co-op.  The two combined together made a beautiful, tasty sandwich.


4 slices whole wheat carrot bread (any whole grain bread will do)
1-14.5 oz. can unsalted cannellini beans
2 small tomatoes, sliced
1 t. onion powder
½ bunch kale, cleaned and torn into bite size pieces
1 lemon
Salt & pepper to taste


Drain ½ of the liquid from the cannellini beans and then place the beans in a small bowl.  Smash the beans with a potato masher or the back of a large spoon.  Add the juice from ½ of the lemon, onion powder and salt & pepper.  Mix well and set aside.

Using a small skillet, place rinsed kale in the pan over medium high heat.  Squeeze the juice from the other half of the lemon.  Toss the kale until it just starts to wilt then remove from heat.

Toast the wheat carrot bread. 

Spread the bread with a nice helping of bean spread.  Next layer some sliced tomatoes and top with some kale and another slice of bread.  Serve with grapes and veggies.
