Meatless Loaf

This is my version of meatloaf.  It looks like meatloaf and tastes very similar to meat loaf only it’s healthier.  If you don’t have chili sauce you can use catsup.  This also is delicious as sandwiches with mustard and lettuce the next day.

Ingredients

1 can black beans (no salt added) drained & rinsed
1 can dark red kidney beans (no salt added), drained & rinsed
2/3 cup cooked brown rice
2/3 cup oatmeal
2 T. flaxseed
2 T. wheat germ
2/3 cup chili sauce
1 T. dried onions
1 t. dried parsley
1 t. onion powder
3 cloves garlic, minced
½ green pepper, diced (optional)
½ t. salt
½ t. pepper
¼ cup Hunts catsup (with no high fructose corn syrup)
2 T. brown sugar

Instructions

Preheat oven to 400 degrees.

Spray a Pyrex dish with a non stick spray, then take a paper towel and wipe out excess oil.  Otherwise use a nonstick loaf pan if you have one.

Combine all of the ingredients in a large mixing bowl.  Using clean hands, squish mixture until everything is well blended. If it is a little dry add a couple more tablespoons of chili sauce.   Form into the shape of a loaf and place in a baking dish.  Spread catsup and brown sugar on top of loaf using your hands.  Make sure the loaf is well coated.  Pour approximately 1/3 cup of water in the pan.

Cover with non stick foil and bake for 1 hour.  Reduce the heat to 300 degrees.  Remove the foil and bake another 20 minutes so the top starts to brown.    Remove from oven and cut in slices to serve.
