Mexican Confetti Rice

This is a perfect side with Mexican food.  Yes we eat Mexican food, without cheese and oil.  Veggie fajitas are delicious with steamed veggies and fresh lime and salsa.


2 cups brown rice
2 cans RO*TEL tomatoes
1 can black beans (drained)
½ small pkg. frozen tender corn
1 red pepper diced
½ red onion diced
Salt + (1 teaspoon cumin is optional)



Cook onion and red pepper in skillet with ½ cup of water until onion becomes translucent and pepper softens.  Add corn and cook for a couple more minutes.   Next add the brown rice, beans and RO*TEL tomatoes.  Mix well and salt to taste.  Heat mixture for an additional 10 minutes and serve.
