Oatmeal Potpourri

This recipe has become my favorite way to start the day.  This makes a huge bowl of oatmeal and always keeps me feeling full until lunchtime.  Make sure to keep the ground flaxseeds and the dried orange peel refrigerated after opening.


1 apple, diced
1 T. dried cranberries
1 T. dried cherries
½ cup oatmeal
2 heaping t. ground flaxseeds
½ t. dried orange peel
¾ cup water


First clean the apple and then core out the center.  Slice the apple in half and then make about 4-5 slices with each half.  Then dice the apple in bite size pieces.  Place the apples in a large cereal bowl.

Next add the oatmeal on top of the apples then followed by the ground flaxseeds.  Sprinkle the dried cranberries and cherries on next. 

Pour the water on top of the oats and fruit and then microwave on the high setting for 3:15 minutes. 

Remove from microwave and top with blueberries.  Sprinkle the orange peel on top and serve with unsweetened vanilla almond milk.
