Olive, Tomato Pasta

When you are super tired and want a quick delicious meal, try this pasta dish.  It is very easy and is ready in no time.


1 pkg. whole wheat linguine
1 28 oz. can crushed tomatoes
1 15 oz. can diced tomatoes
1 onion diced
6 cloves garlic
1 jar capers
1 jar artichoke hearts packed in water
1 ½ cups assorted kalamata and green olives
1 t. oregano
1 t. basil


Bring pasta water to boil and add pasta.  Cook approximately 6 – 8 minutes depending on type of pasta. 

In a large skillet add onion and garlic with 2/3 c. water.  Cook for approximately 3 minutes.  Next add tomatoes, capers, olives and spices.  Heat thoroughly, about 6 – 8 minutes on medium high. 

Once the pasta is done, drain water but keep about 1 cup of reserved water from pasta.  Place cooked pasta, reserved pasta water and tomato mixture in large pasta bowl and serve.
