Orange, Cranberry Pistachio Wild Rice Salad

This is adapted from Ellie Krieger 2007 recipe. I made this and took this to a family gathering.  One of my nephew's friends who is this big, burly kind of guy could not get enough of this stuff.


1 ½ cups uncooked brown rice
1 ½ cups uncooked wild rice
1 orange peeled & chopped
6 large basil leaves, sliced
½ small red onion, chopped
½ cup pistachios
2/3 cup dried cranberries
Zest of 1 orange

1/3 cup red wine vinegar
¼ cup water
1 ½ t. Dijon mustard
1 t. honey
¼ t. salt
Fresh cracked pepper


Cook brown and wild rice according to directions on package.

In large serving bowl mix prepared rices, orange, basil, onion, pistachios, orange zest and cranberries. 

In separate bowl prepare dressing, whisk dressing ingredients together.

Pour dressing over salad mixture and serve at room temperature.
