Polenta Toasts

This is a quick and easy appetizer that is great to serve anytime of year.  No baking required!  Simply top the polenta with any of your favorite toppings.  The possibilities are endless!



1 ¼ cups polenta

4 cups water

salt to taste


Assorted toppings:


Grape tomatoes

Kalamata olives

Sundried tomatoes

Sautéed mushrooms

Roasted red pepper

Fresh herbs



Line a 9 “ X 13 “ baking dish with non-stick foil.  Set aside.


Using a heavy bottom stainless steel saucepan, bring the water and salt to a boil.  Gently whisk in polenta and reduce heat to low.  Continue to whisk until polenta thickens and all of the water has absorbed, approximately 5 to 10 minutes.  Pour polenta in baking dish and spread out into a smooth layer.  Let cool, then place in the refrigerator for a couple of hours to set up. 


Remove from refrigerator and cut into diamond shapes.  Garnish with any toppings you choose and serve.
