Quick and Easy Skillet Casserole

One of my quick go to dinners usually is centered around a package of the Trader Joe’s Harvest Grains Blend.  I always start out sautéing an onion and then whatever vegetables I have on hand with some vegetable stock and seasonings.  It is always good and never takes long at all for a nice simple dinner.


1 ½ cups royal white quinoa

1 package Trader Joe Harvest Grains Blend

1 yellow onion, diced

1 zucchini, chopped

1 yellow summer squash, chopped

1 red pepper, chopped

1 box unsalted vegetable stock

1 cup white wine with lemon

1 small lemon, juiced and zest

1 handful fresh parsley

1 ½ t. onion powder

1 t. dried oregano

2 large cloves garlic, minced

Salt to taste


Place the onion in a large skillet and sauté until brown.  Next add the zucchini, yellow summer squash and red pepper and sauté another couple minutes.


Place the garlic and white wine in with the veggies and stir well.


Next add the royal white quinoa, Trader Joe’s Harvest Grains Blend , vegetable stock, lemon juice, onion powder and oregano in with the veggies.  Bring to boil and reduce heat to low.  Cook until most of the liquid has been absorbed.  Sprinkle with lemon zest and the fresh parsley.  Mix well and salt to taste.
