Quick and Easy Spaghetti

This is just another version of the spaghetti sauce that I make which the girls absolutely love.  I let them help crush the garlic and cut the basil leaves.


1 large yellow onion, diced
8 oz. sliced mushrooms
1 28 oz. can pureed tomatoes
1 28 oz. can diced tomatoes
1½ t. dried oregano
10 fresh basil leaves, chopped
1 t. salt
3 large cloves garlic
1 T. tomato paste
1 T. honey
1 box whole grain thin spaghetti


In a large stock pot, boil water for the spaghetti while making the sauce.  Cook until done and reserve about 1 cup of pasta water.  Once done drain pasta and toss with remaining cup of water.

Using a large nonstick skillet, sauté the onion and mushrooms for approximately 4 to 5 minutes. 

Add the pureed tomatoes, diced tomatoes, oregano, fresh basil, salt, garlic, tomato paste and honey.  Stir well and reduce heat to low once the sauce starts to bubble.

Dish the spaghetti in a pasta bowl and top with sauce.  Serve with salad and toasted Italian bread.
