Savory Kale Salad

This is a quick and easy salad that can be served as a side dish or a bigger serving and makes it an entrée.


1 bunch kale, cleaned with stems removed cut in bite size pieces
1 8 oz. pkg. sliced mushrooms
¼ red onion, thinly diced
1 clove garlic, minced
½ cup toasted walnuts
½ cup cherry tomatoes, sliced in halves
Fat free balsamic dressing


In a large skillet place the mushrooms and the onion with ½ cup of water.  Sauté over medium high heat until the mushrooms and onion are thoroughly cooked.  The onions should start to caramelize and the mushrooms should be reduced.  Add the garlic and stir well.

Place the kale on top of the mushrooms and the onions and cover with a lid.  Steam the kale for approximately 3 to 4 minutes.  The kale should be bright and shiny, not too wilted. 

Stir the kale, mushrooms, onion and garlic together well.  Place in a nice pasta or salad bowl.  Drizzle some balsamic dressing over the top.
