Strawberry Kale Salad

I have been using flavored vinegars for different salads and are they ever delicious.  The vanilla and strawberry balsamic vinegars are perfect on top of kale.  If you can’t find flavored vinegars you can make your own.  Experiment with fruit and add some vanilla to regular balsamic vinegar.


1 bunch of kale
1 cup cooked wild rice blend
2 cups sliced strawberries
Strawberry balsamic vinegar
Vanilla balsamic vinegar


Clean kale and tear into bite size pieces.  Toss in a large skillet and some water to the bottom of the pan.  I usually add about 1 ½ - 2 cups of water.  Heat the water until the kale starts to turn bright green and a desired a consistency.  Drain the water and rinse with cold water. 

Place the kale in a salad bowl and top with the strawberries and wild rice


Drizzle with approximately 2 tablespoons of strawberry balsamic vinegar and 2 tablespoons of vanilla balsamic vinegar.  Toss all ingredients together and serve.
