Summer Primavera

This is my husbands favorite pasta dish in the summer time.


1 1b. whole wheat penne
1 medium zucchini sliced
1 medium summer squash sliced
1 red onion sliced in thin wedges
1 orange pepper sliced in thin strips
1 cup cherry tomatoes halved
5 cloves garlic minced
1 ½ t. dried basil
1 ½ t. salt
1 cup reserved pasta water
Juice from 1 lemon


Cook pasta according to directions.  When finished cooking pour pasta in to large pasta bowl and keep 1 cup reserved pasta water.

Place halved cherry tomatoes in small bowl with 1 clove minced garlic,  ½ t. of salt and ½ t. of basil.  Set aside.

In large skillet, sauté veggies with ½ cup of water until slightly softened.  Add 3 cloves of garlic, 1 t. dried basil and 1 t. of salt and toss well.  Pour veggies and reserved pasta water on top of pasta.  Squeeze juice from lemon on top of pasta and veggies.  Add remaining clove of minced garlic and cherry tomatoes and mix well.  Serve in pasta bowls.
