Sweet Potato Black Bean Chili

I had some extra sweet potatoes and thought they would make a nice addition to some black bean chili.  Consider adding an extra jalapeno or more chili powder for even spicier flavor.


2 lbs. dried black beans
3 medium to large sweet potatoes, peeled and diced
1 large onion, diced
1 jalapeno, finely diced
1 box unsalted vegetable stock
3- 14.5 oz. cans unsalted diced tomatoes
1- 14.5 oz can unsalted tomato sauce
1 bunch chopped fresh parsley
3 T. cumin
2 T. chipotle powder
2 T. chili powder
2 cloves garlic, minced
Salt & Pepper to taste


Pre soak beans either overnight or using the quick soak method according to package directions.  Rinse the beans well and set aside.

Place the onion, jalapeno, black beans, diced tomatoes, tomato sauce, vegetable stock, fresh parsley, chili powder, cumin, garlic and salt and pepper to a large stock pot.  Bring to boil then reduce heat to low.  Continue to cook for 2 ½ - 3 hours until the beans are thoroughly cooked.  Serve with hearty bread and fresh fruit.
