Sweet Potato Chips with Pineapple Salsa

I found this awesome chip maker at Sur La Table, by mastrad, called TopChips.  You can make fantastic, crunchy chips in the microwave in minutes without any grease.  The chips are fantastic!  The pineapple salsa was something I threw together for a dip with the sweet potato chips.  The combination of the chips and salsa is amazing!

Ingredients

Sweet potato chips
2 sweet potatoes, sliced very thinly

Pineapple Salsa
Juice from pineapple
1 pineapple, cored and diced very thinly
1/8th poblano pepper, thinly diced
1 stalk celery, thinly diced
4 small green onions, thinly sliced
Zest from one small lime
Juice from one small lime
1 t. honey
Pinch of salt

Instructions

Cook sweet potato chips in Microwave for 4 to 4 ½ minutes (each microwave is a bit different, so you may have to experiment).  Place in a bowl and sprinkle with salt, cinnamon or cumin.  Continue until all of the chips are done.

In a small bowl add all of the ingredients for the salsa and mix well.  This can be done ahead of time so the flavors can blend together.  Place in an airtight container and refrigerate until serving time.

Place the salsa in a small dip bowl and place the chips around the bowl.  Enjoy!
