Tomato Bean Casserole

Beans are delicious, filling food.  This casserole is very satisfying.  Serve with a simple salad for a complete meal.


2 -1 lb. pkgs  dried navy, northern or 17 bean mixture
1 large onion, chopped
3 stalks celery, diced
6 large cloves garlic
2 t. smoked paprika
2 carrots, diced
2 cans tomato paste
1 large can diced tomatoes
2 ½ cups water
1 t. Italian seasoning
1 t. oregano
1 t. salt
1 t. black ground pepper


Preheat oven 350 degrees

Overnight soak beans or quick soak beans according to package and add 1 t. of baking soda to water.  Drain and rinse beans.

In large Dutch oven, add onion, celery, carrots and garlic with ½ cup of water.  Saute for 4 or 5 minutes until soft.  Add prepared beans to veggies.

Combine smoked paprika, tomatoes, water, Italian Seasoning, oregano, salt and pepper.  Mix well and cook for 2 ½ to 3 hours.

Serve in bowl with cornbread, green salad and fresh fruit.
