Vegan Caviar

This is my variation of Texas Caviar.  Using kalamata and green olives add a nice twist.  This is the perfect dish to take and share with others for parties with a bag of Baked Tostitos.

Ingredients

1 can reduced sodium black beans, drained & rinsed
1 can reduced sodium garbanzo beans, drained & rinsed
1 can hominy, drained & rinsed
1 small bag frozen corn
2 cups grape tomatoes, halved
2/3 cup kalamata olives, chopped
2/3 cup green olives, halved
¼ small red onion, diced
1 red pepper, diced
1 small bottle fat free Italian dressing
Cracked pepper

Instructions

Combine all ingredients in a bowl and mix well. 

Cover and chill or serve immediately with Baked Tostitos.
