Vegan St. Patrick’s Day Feast

I made this along with the baked cabbage recipe for St. Patrick’s Day.  It takes a while to bake everything but it was well worth the wait.


1 ½ lbs new potatoes, cleaned
1 bag baby carrots
1 lb. green beans
1 small onion, cut in thin strips
1 cup fat free Italian dressing
1 cup vegetable broth
1 cup water
2 cloves garlic, minced
1 t. salt
1 t. onion powder


Preheat oven to 400 degrees.

Place potatoes, carrots, green beans and onions in a large baking dish.

In a large glass mixing cup whisk Italian dressing, vegetable broth, water, garlic, salt and onion powder.  Pour over vegetables.

Cover baking dish with foil.  Bake for 45 minutes and remove from oven.  Remove foil and stir well so everything is coated with juice.  Place foil back on and cook another 45


Serve in pasta bowls.
