Vegetable Barley Soup

This is a quick and easy soup to throw together and can be ready in less than an hour.  Not bad for homemade soup.  If you want lots of barley use 1 ½ cups, if you want less, use only 1 cup.


1 large onion, diced
1 ½ cup shredded carrots
3 stalks celery, diced
3- 32 oz. boxes vegetable stock
½ cabbage, sliced thinly
1 28 oz. can whole tomatoes (squish with your hand before adding)
1 28 oz. can seasoned tomatoes
1 pkg. Knorr Vegetable Recipe Mix seasoning
1 t. basil
1 t. garlic powder (optional)
1 ½ cup quick Barley
1 t. kosher salt
1 t. pepper


In a large stock pot add the onion, carrots, celery, vegetable stock, cabbage, whole tomatoes, seasoned tomatoes, Knorr Vegetable Recipe Mix seasoning, basil, garlic powder and salt.   Stir everything together well.   Cook on medium high heat until the soup begins to boil.  Turn to low and continue to cook with the pot covered for another 30 minutes. 

Add the barley and cook an additional 15 to 20 minutes and serve.
