Door County Cherry Apple Salad

There are few things better than Door County cherries.  I use them in just about everything.  This salad is super delicious and filled with lots of wonderful textures.  If you don’t have any of the Bema’s & Pa white strawberry & peach infused balsamic vinegar you can substitute white balsamic vinegar or champagne vinegar with some blended peach, strawberry or any other fruit you have on hand.

Ingredients

1 ½ cups wheat berries
2 apples, diced
Zest one lemon
Juice one lemon
2/3 cup Door County dried cherries
1 cup carrot, julienned
1 cup celery, diced
2/3 cup pistachios
1 large handful fresh parsley, chopped
Fresh cracked pepper to taste
Bema’s & Pa white strawberry & peach infused balsamic vinegar

Instructions

Prepare wheat berries according to package directions.  Rinse with cold water and place in large salad bowl.

Dice apples and pour juice of lemon on top of apples and mix well. 

Add apples, Door County cherries, carrots, celery, pistachios, fresh parsley, lemon zest and pepper in with the wheat berries.  Mix well.  Drizzle about 6 – 8 T. of infused balsamic vinegar on top of salad and stir well. 

Serve on lettuce leaf or use as a side.
