Hummus Panini

My husband and I were lucky enough to go to the Farms 2 Forks Immersion in Chicago and saw a video of Rip Esselstyn making something similar to these.  This is a very filling sandwich and you can use any type of bean or vegetable you prefer.

Ingredients

Pepperidge Farms 7 Grain Deli Flats
1 can white kidney beans, drained
Zest from lemon
Juice from one lemon
1 clove garlic minced
1 tomato sliced thinly
2 cups arugula
8 oz. sliced mushrooms
¼ red onion, thinly sliced

Instructions

Place mushrooms in a small skillet and cook over medium high heat for approximately 4 to 5 minutes.  Once they start to brown and reduce in size remove from heat.

Place the kidney beans, lemon zest, lemon juice and garlic in a small bowl.  Mash ingredients together with edge of a spoon or potato masher. 

Separate a deli flat and spread a thin layer of hummus on both sides of deli flat. Next layer the tomatoes, arugula, mushrooms and red onion on hummus. 

Close the sandwich together so the hummus layers are facing in.  Place the sandwich on the grill pan then place a heavy skillet on top of sandwich.  This will keep the sandwich together and keep it from falling apart.  If you have a Panini press use that instead.  Cook for approximately 3 to 4 minutes and then flip over and repeat.
