Linda’s Spicy Black Bean Sandwiches

Every February my family has a get together to celebrate all of the February birthdays.  My sister Linda was making pulled pork sandwiches for everyone and created this dish for my husband and me.  She is an excellent cook and we very much enjoyed these sloppy joes.  I will be making these again!

Ingredients

2 cans unsalted black beans, drained
2 cans Ro Tel mild tomatoes with green chilies, drained
1 small onion, chopped fine
8 oz. mushrooms, chopped fine
1 small green zucchini, diced fine
1 small yellow summer squash, diced fine
2 large cloves garlic, minced
5 T. tomato paste
1-2 T. agave syrup
Salt & pepper to taste

Instructions

In a large skillet over medium high heat, sauté the onion and mushrooms until caramelized.

Next add the zucchini and summer squash along with the garlic and sauté until vegetables are softened. 

Take about 2/3 of a can of black beans and smash together with the tomato paste and agave syrup.  Place smashed black beans, remaining black beans and Ro Tel tomatoes in the skillet with the vegetables.  Season with salt & pepper.

Simmer until thickened and serve with whole wheat buns and some fresh fruit or baked potato fries.
